Coach Mike Baker’s Three Cheers Pancakes!

Gluten Free, Low Carb, Lactose Free are three major positives about these pancakes, and the great taste, texture and high protein gives everyone something to cheer about!

Add the following into your blender:

Almonds, Cashews, Pecans – Almonds alone can work, but a combination keeps your pallet guessing

---- 2 Cups – (1 cup of Almonds, ½ cup of Pecans, ½ cup of Cashews)

Coconut Flour – Any health food store will carry this

---- 1/2 Cup

**Blend the Nuts and the Coconut Flour together on low for 1 minute before moving on**

Baking Powder

---- 1 Tea spoon

Baking Soda

---- 1/2 Tea Spoon

Sea Salt

----Just shy of ½ Tea Spoon

**For Best Results, have the next two ingredients ready to add at the same time (milks and eggs). As soon as wet ingredients hit dry try not to let it sit too long before blending. 

Eggs - Free range eggs tend to keep you from feeling bloated.

---- 4 Eggs (full eggs without shell)

Milks - Almond Milk, Coconut Milk, Cashew Milk, and Lactose Free Milk.  I suggest a combination of two or more different unsweetened milks to give more sophisticated flavor

---- 2 Cups – (Feel free to fill up 1 cup of your favorite type, then split the 2nd cup with other flavors)

** Blend again on low for 1 minute. Also, check to make sure chunks aren’t gathering**

Vanilla Extract

---- 1 lid full

Sugar Substitute – Stevia is my favorite, also Agave works. A combination of both is nice

---- Two Full Scoops of Stevia, and at least 1 full table spoon of Agave

Acai

----  1/2 Packet of Unsweetened Frozen Acai (You can also sub for a Half of a Banana, or Two table spoons full of Pumpkin Pure)

Olive Oil

---- 1 lid full

**Blend on low for 30 seconds, then on a higher setting for 90 seconds, or until it looks fully blended**

Cooking instructions:

  • Coconut Oil – I suggest coconut oil on the pan before cooking (substitute butter if you like)
  • Pour your 3 cheers pancake mix on to the pan. Size to your liking.
  • Cook on Medium and watch for the sides to start solidifying.
  • Flip and finish when you have hit your desired color and texture.

By the way, these pancakes go very well with a good Greek Yogurt.
